Zucchini Delight
Yield: Makes 6 servings
Ingredients:
1can (10-3/4 ounces) condensed reduced-fat tomato soup, undiluted
1tablespoon lemon juice
1teaspoon sugar
2cloves garlic, minced
1/2teaspoon salt
6cups 1/2-inch zucchini slices
1cup thinly sliced onion
1cup coarsely chopped green bell pepper
1cup sliced mushrooms
2tablespoons grated Parmesan cheese
Preparation:
1.Combine soup, lemon juice, sugar, garlic and salt in large saucepan; mix well. Add zucchini, onion, bell pepper and mushrooms; mix well. Bring to a boil; reduce heat. Cover and cook 20 to 25 minutes or until vegetables are crisp-tender, stirring occasionally. Sprinkle with cheese before serving.
