Texas Beef Brisket
Yield: Makes 4 servings
Ingredients:
1tablespoon paprika
2teaspoons salt
1teaspoon black pepper
1/4teaspoon ground red pepper
1small beef brisket, trimmed (about 1-1/4 pounds)
Texas BBQ Sauce (recipe follows)
Preparation:
1.Combine paprika, salt, black and red pepper in small bowl; mix well. Rub spice mixture onto brisket. Cover; marinate in refrigerator overnight.2.Prepare Texas BBQ Sauce; set aside. Prepare grill for direct cooking.3.Place brisket on grid. Grill, covered, over medium heat 2-1/2 hours or until brisket offers a slight resistance when pierced; check occasionally and baste with sauce as needed. Boil any remaining sauce and serve on the side for dipping.

1/2cup cider or white vinegar
1small onion, finely chopped
2tablespoons Worcestershire sauce
1jalapeño pepper,* seeded and minced
1tablespoon mustard
1teaspoon olive oil
Preparation:
1.Combine all ingredients in medium bowl; mix well.
