Tarragon Chicken Salad Sandwiches
Tarragon Chicken Salad Sandwich
Yield: Makes 6 servings
Fresh grapes are added to this chicken salad for a burst of flavor and nutritional value. Besides supplying fiber and vitamin A, grapes are low in calories, which makes them a great snack food. Green grapes that have a tinge of yellow and red grapes that are predominantly crimson will be the sweetest.
Ingredients:
1-1/4pounds boneless skinless chicken breasts, cooked
1cup thinly sliced celery
1cup seedless red or green grapes, cut into halves
1/2cup raisins
1/2cup plain nonfat yogurt
1/4cup reduced-fat mayonnaise or salad dressing
2tablespoons finely chopped shallots or onion
2tablespoons minced fresh tarragon or 1 teaspoon dried tarragon leaves
1/2teaspoon salt
1/8teaspoon white pepper
6lettuce leaves
6whole wheat buns, split
Preparation:
1.Cut chicken into 1/2-inch cubes. Combine chicken, celery, grapes and raisins in large bowl. Combine yogurt, mayonnaise, shallots, tarragon, salt and pepper in small bowl. Spoon over chicken mixture; mix lightly.2.Place 1 lettuce leaf on each bun. Divide chicken mixture evenly among buns.
