Salmon, Cherry Tomato and Pea Frittata

Ingredients
3 tbsp extra virgin olive oi,8 salad onions, sliced1 garlic clove, crushed160g/5½oz cherry tomatoes, halved6 eggssmall bunch fresh mint, chopped (optional) salt and freshly ground black pepper200g tin salmon, drained and skin and bones removed 110g/4oz frozen peas, defrosted and drained
Method
1. Heat the oil in a non-stick frying pan and fry the spring onions and garlic for a few minutes before adding the tomatoes. Preheat the grill to high.2. Beat the eggs with the mint and season with salt and pepper. Swirl the egg mixture into the pan, scatter over the flaked salmon and the peas. Cook over a medium heat for 3-4 minutes until almost set.3. Transfer to a preheated grill and cook for a further 2-3 minutes until lightly browned and cooked through. 4. Serve warm or cold, cut into wedges.
