Quick Fruited Couscous
Quick Fruited Couscous
Yield: Makes 8 servings
Serve this colorful couscous warm or chilled with a light salad or sandwich for a quick, easy-to-pack lunch.
Ingredients:
2-1/4cups orange juice
1tablespoon margarine
1teaspoon grated orange peel
1/2teaspoon salt
1package (10 ounces) precooked couscous*
1medium orange, peeled, separated into sections and cut into halves
1cup red grapes, cut into halves
6ounces firm tofu, drained and cubed
1/2cup golden raisins
Preparation:
1.Bring orange juice, margarine, orange peel and salt to a boil in large saucepan over high heat. Stir in couscous; cover and remove from heat. Let stand 5 minutes.2.Fluff couscous with fork; stir in orange pieces, grapes, tofu and raisins until well blended. Serve immediately or cover and refrigerate.
