Quick Creamed Cauliflower
Yield: Makes 3 servings
Another cruciferous vegetable with links to cancer prevention, cauliflower is low in calories, with only 30 calories per cup.
Ingredients:
1package (10 ounces) frozen cauliflower florets
1/2cup fat-free reduced-sodium chicken broth
1/2cup evaporated skimmed milk
2tablespoons all-purpose flour
Salt and pepper to taste (optional)
Paprika (optional)
Preparation:
1.Combine cauliflower and chicken broth in saucepan. Simmer, covered, 10 to 12 minutes or until cauliflower is tender. Combine milk and flour; mix well. Stir into saucepan. Cook and stir until sauce simmers and bubbles. Sprinkle with salt, pepper and paprika before serving, if desired.
