Quick Beef Stew in Foil
Yield: Makes 2 servings
Ingredients:
8ounces boneless beef top sirloin steak, cut into 1-inch cubes
1medium red potato, peeled and cut into 3/4-inch cubes
1cup frozen mixed vegetables
2/3cup beef gravy
1/2teaspoon parsley flakes
1/4teaspoon salt
1/4teaspoon dried thyme
1/8teaspoon black pepper
1sheet (20X12 inches) heavy-duty foil, lightly sprayed with nonstick cooking spray
Preparation:
1.Preheat oven to 450°F.2.Combine all ingredients except foil in medium bowl; stir to mix.3.Place beef mixture in center of foil sheet. Double fold sides and ends of foil to seal packet, leaving head space for heat circulation. Place packet on baking sheet.4.Bake 30 minutes or until beef is tender. Carefully open one end of packet to allow steam to escape. Open packet and transfer stew to two bowls.
