Pork & Tomato Ragoût
Yield: Makes 6 servings
Ingredients:
2pounds pork stew meat, cut into 1-inch pieces
1/4cup all-purpose flour
3tablespoons oil
1-1/4cups white wine
2pounds red potatoes, cut into 1/2-inch pieces
1can (about 14 ounces) diced tomatoes
1cup finely chopped onion
1cup water
1/2cup finely chopped celery
2cloves garlic, minced
1/2teaspoon black pepper
1stick cinnamon
3tablespoons chopped fresh parsley
Preparation:
1.Toss pork with flour. Heat oil in large skillet over medium-high heat. Add pork to skillet; brown on all sides. Place pork in slow cooker.2.Add wine to skillet; bring to a boil, scraping up browned bits from bottom of skillet. Pour into slow cooker.3.Add all remaining ingredients except parsley. Cover; cook on LOW 6 to 8 hours or until pork and potatoes are tender. Remove and discard cinnamon stick. Adjust seasonings, if desired. Sprinkle with parsley just before serving.
