Panama Pork Stew
Yield: Makes 6 servings
Sweet potatoes are the star of this stew and they are nutritional superstars, too. One sweet potato provides about two and a half times the RDA for healthy adults of vitamin A, plus fiber, potassium and vitamin C.
Ingredients:
2small sweet potatoes (about 3/4 pound), peeled and cut into 2-inch pieces
1package (10 ounces) frozen corn
1package (9 ounces) frozen cut green beans
1cup chopped onion
1-1/4pounds pork stew meat, cut into 1-inch cubes
1can (14-1/2 ounces) diced tomatoes
1/4cup water
1to 2 tablespoons chili powder
1/2teaspoon salt
1/2teaspoon ground coriander
Preparation:
1.Place potatoes, corn, green beans and onion in slow cooker. Top with pork.2.Combine tomatoes, water, chili powder, salt and coriander in medium bowl. Pour over pork in slow cooker. 3.Cover; cook on LOW 7 to 9 hours.
