Pan Roasted Shallots with Ham

Ingredients

125g/4oz air dried ham350g/12oz shallots4 tbsp extra virgin olive oil1 tsp brown sugar2 tbsp red wine vinegar1 tsp thyme leavessalt and freshly ground black pepper4 figs (optional)thin salad leaves for garnish
Method

1. Heat the olive oil in a heavy saucepan, stir in the shallots, cover and cook over a medium heat for 5 minutes.2. Add the brown sugar, thyme, salt and pepper and 2 tbsp water.3. Cover the pan and cook slowly over a low heat, for about 30 minutes, stirring from time to time to prevent the onions from sticking to the pan, or until the liquid caramelises slightly and the onions are soft with a little colour.4. Then add the vinegar, stir well and remove it straight away from the heat and allow to cool. This can be prepared in advance.5. Just before you are ready to serve, preheat the oven to 180C/350F/Gas 4 and place the onions in a shallow, lidded casserole and cook for 15 minutes. 6. Arrange the ham on individual plates, lay the onions on the ham and pour the juices around the plate. 7. Cut the figs in four and arrange with the onions and garnish with salad leaves.
