Olive bruschetta

Ingredients
olive oil, to drizzle2 slices French baguette2-3 celery sticks, very finely chopped55g/2oz olives, pitted and very finely choppeda small handful of fresh parsley, choppedsalt and freshly ground black pepper½ lemon, juice only
Method
1. Drizzle the olive oil over the French baguette slices. 2. Heat a griddle pan until hot and chargrill the bread for a few minutes on each side until golden.3. Meanwhile, place the celery and olives into a bowl and stir in the parsley, seasoning and lemon juice to combine.4. Remove the chargrilled bread from the heat and spoon the olive mixture on top. Cut into strips and transfer to a serving plate to serve.
