Old-Fashioned Devil' s Food Cake
Old-Fashioned Devil' s Food Cake
Yield: Makes 16 servings
Ingredients:
6tablespoons butter, softened
1-1/2cups sugar
3eggs
1-1/2teaspoons vanilla
2cups cake flour
1/2cup unsweetened cocoa powder
2teaspoons baking powder
1/2teaspoon baking soda
1/2teaspoon salt
1cup buttermilk
Creamy Chocolate Frosting (recipe follows)
Fresh raspberries (optional)
Preparation:
1.Preheat oven to 350°F. Grease and flour 3 (8-inch) round cake pans.2.Beat butter and sugar in large bowl with electric mixer until fluffy. Beat in eggs and vanilla.3.Combine flour, cocoa, baking powder, baking soda and salt in medium bowl. Add flour mixture to butter mixture alternately with buttermilk, mixing well after each addition.4.Pour batter into cake pans. Bake 25 to 30 minutes or until cake layers spring back when lightly touched and wooden toothpick inserted in centers comes out clean. Cool cake layers in pans on wire racks 10 minutes; remove from pans and cool completely. 5.Meanwhile, prepare Creamy Chocolate Frosting.6.Place one cake layer on serving plate; spread with frosting. Repeat with remaining two cake layers and frosting. Frost side and top of cake. Garnish, if desired.
Creamy Chocolate Frosting
Yield: Makes about 2-1/2 cups frosting
Ingredients:
5cups powdered sugar
1/3cup unsweetened cocoa powder
2tablespoons butter, softened
4to 5 tablespoons fat-free (skim) milk, divided
1teaspoon vanilla
Preparation:
1.Combine powdered sugar, cocoa, butter, 4 tablespoons milk and vanilla in large bowl. Beat with electric mixer at low speed until smooth, scraping bowl frequently. Beat in additional 1 tablespoon milk until of desired spreading consistency.
