Oatmeal-Molasses Cookies
Yield: Makes 36 servings
Ingredients:
1cup whole wheat flour
1cup all-purpose flour
1teaspoon baking soda
1teaspoon ground cinnamon
1/2teaspoon salt
1/2teaspoon ground ginger
1/2cup cholesterol-free egg substitute
1/2cup granulated sugar
1/4cup packed light brown sugar
1/4cup (1/2 stick) margarine or butter
1/4cup mild-flavored molasses
1cup uncooked quick oats
1/2cup raisins
Preparation:
1.Preheat oven to 350°F. Lightly coat cookie sheet with nonstick cooking spray; set aside.2.Combine whole wheat flour, all-purpose flour, baking soda, cinnamon, salt and ginger in medium bowl; set aside.3.Combine egg substitute, sugars, margarine and molasses in large bowl with electric mixer at high speed until well blended. Add flour mixture. Stir in oats and raisins. Drop dough by teaspoonfuls onto prepared cookie sheet.4.Bake 10 minutes or until firm to touch. Remove to wire rack and cool completely.
