Oat & Dried Fruit Balls
Yield: Makes about 5 dozen balls
Ingredients:
3cups uncooked old-fashioned oats
1cup flaked coconut
1cup chopped dried mixed fruit
1/4cup sunflower seeds or chopped walnuts
1cup sugar
1/2cup milk
1/2cup butter or margarine
6tablespoons unsweetened cocoa powder
1/4teaspoon salt
1teaspoon vanilla
Preparation:
1.Combine oats, coconut, dried fruit and sunflower seeds in large bowl; set aside. Combine sugar, milk, butter, cocoa and salt in 2-quart saucepan until blended. Heat to boiling. Boil 3 minutes, stirring constantly; remove from heat. Stir in vanilla. Pour hot sugar syrup into oat mixture; stir until well blended. When cool enough to handle, shape rounded tablespoonfuls into balls; place on waxed paper until completely cooled and firm.
