New-Fashioned Gingerbread Cake
Yield: Makes 9 servings
Ingredients:
2cups cake flour
1teaspoon baking powder
1teaspoon ground ginger
1/2teaspoon baking soda
1/2teaspoon ground cinnamon
1/2teaspoon ground nutmeg
1/4teaspoon ground cloves
3/4cup water
1/3cup packed brown sugar
1/4cup molasses
3tablespoons canola oil
2tablespoons finely minced crystallized ginger (optional)
2tablespoons powdered sugar
Preparation:
1.Preheat oven to 350°F. Coat 8-inch square baking pan with nonstick cooking spray; set aside.2.Combine flour, baking powder, ginger, baking soda, cinnamon, nutmeg and cloves in large bowl; mix well.3.Beat water, brown sugar, molasses and oil in small bowl with electric mixer at low speed until well blended. Pour into flour mixture; beat until just blended. Stir in crystallized ginger.4.Pour into prepared pan. Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. Let cool 10 minutes. Sprinkle with powdered sugar just before serving.
