Neapolitan Sauce
Neapolitan Sauce
Yield: Makes 8 (1/2-cup) servings
This flavorful red sauce comes straight from Naples, Italy, where parsley and basil are considered staple ingredients in any great pasta sauce.
Ingredients:
1/2cup minced green bell pepper
1/4cup minced onion
1/4cup coarsely chopped celery
2cloves garlic, minced
1teaspoon olive oil
2cans (10 ounces each) no-salt-added whole tomatoes, undrained
1/4cup chopped fresh parsley
1tablespoon chopped fresh basil
1/4teaspoon salt
1/8teaspoon black pepper
Preparation:
1.Place bell pepper, onion, celery, garlic and oil in medium saucepan. Cook and stir over medium heat until onion is tender.2.Add tomatoes, parsley, basil, salt and black pepper. Reduce heat to low; cover. Simmer 15 minutes; uncover. Cook and stir 10 minutes or until sauce thickens.
