Kohlrabi omelette

Ingredients
2 tbsp olive oil1 kohlrabi, peeled and shredded4 carrots, peeled and grated30g/1oz cashews2 eggs, beaten
Method
1. Heat 1 tbsp of oil in a medium frying pan.2. Add the kohlrabi, carrot and cashews and sauté for 3-4 minutes.3. Heat the remaining oil in a small wok.4. Add the eggs to the wok, turning the wok to spread the egg thinly around all its sides.5. Leave the omelette to cook for one minute before removing the kohlrabi from the heat and spooning it into the centre of the omelette.6. Carefully loosen the sides of the omelette and fold it in half.7. Cook for a further two minutes and serve with a chilli dipping sauce.
