Kofta balls in tomato sauce
Serves 4-6

Ingredients
125g/4oz carrots125g/4oz potatoes125g/4oz gram floursalt and pepper1 onion1 tsp garam masala1 tsp turmeric1 bunch fresh coriander, chopped600g/1lb 5oz chopped tomatoes
Method
1. Finely grate the carrots and the potatoes and then squeeze them to remove the juices.2. Mix in the gram flour and a little salt and pepper3. Form the mixture into balls in your hands then deep fry them at 180C/350F for about 10 minutes, until they are a little darker than golden brown.4. Finely chop the onion and fry it in a little oil5. Add the garam masala, turmeric and fresh coriander and fry together for 2-3 minutes.6. Add the chopped tomatoes (or thick tomato juice)7. Bring to the boil, add salt to taste and set aside.8. Put the fried kofta balls into the sauce, leave to soak for 5 minutes and then serve with rice.
