Jaffa cake muffins with apricot and hot chocolate sauce

Ingredients
100ml/3½fl oz dark chocolate sauce100ml/3½fl oz apricot sauce2 Jaffa Cake muffins or similar2 scoops vanilla ice creamfresh mint25g/loz shelled pistachio nuts, chopped
Method
1. Firstly, warm the sauces gently in two separate pans.2. Remove the paper cases from the muffins. Place on a plate and microwave on full power for 20-30 seconds, or until the chocolate starts to melt on top.3. Place a spoonful of the apricot sauce in the centre of the plate and the chocolate sauce around the edge. Position the muffin in the centre, add a scoop of ice cream, a sprig of mint and a scattering of pistachio nuts.
