Individual Turkey Loaves with Quick Barbecue Sauce
Yield: Makes 6 servings
Ingredients:
Quick Barbecue Sauce (recipe follows)
1pound 93% fat-free ground turkey
1/2cup cholesterol-free egg substitute
2cups crushed bran flakes cereal (4 cups uncrushed)
1/4cup chopped onion
1/4cup chopped celery
1/4cup chopped green bell pepper
1/4cup chopped red bell pepper
1/2teaspoon dry mustard
1/2teaspoon black pepper
Preparation:
1.Prepare Quick Barbecue Sauce; set aside. Preheat oven to 350°F.2.Combine turkey and egg substitute in large bowl. Add bran flakes, onion, celery, bell peppers, dry mustard and black pepper; mix well. Turn out onto waxed paper. Divide into six portions. Shape into 1-inch-thick round or square patties.3.Place patties about 1 inch apart in 13X9-inch baking pan. Spread 1 tablespoon Quick Barbecue Sauce on each patty.4.Bake 20 to 25 minutes or until meat is no longer pink in center. Serve with remaining sauce.

Quick Barbecue Sauce
Yield: Makes 1 cup
Ingredients:
1tablespoon packed light brown sugar
2teaspoons cornstarch
1teaspoon dry mustard
Dash black pepper
1can (8 ounces) no-salt-added tomato sauce
2tablespoons cider vinegar
1teaspoon prepared horseradish
1teaspoon Worcestershire sauce
Preparation:
1.Combine sugar, cornstarch, mustard and pepper in small saucepan. Blend in tomato sauce, vinegar, horseradish and Worcestershire sauce. Cook and stir over medium heat 3 to 4 minutes or until bubbling and thickened.
