Fish parrillada

Ingredients
75ml/2½fl oz olive oil handful wild garlic8 fillets fresh fish (a selection of whatever' s best in the fishmonger' s)salt and freshly ground black pepper
Method
1. Heat the olive oil and the wild garlic in a pan. Cook over a low heat until the garlic has wilted. Remove the pan from the heat and leave to cool. 2. When the olive oil is cool, strain the olive oil into a clean bowl and discard the wild garlic.3. Wash the fish fillets with cold water and dry with kitchen paper. 4. Lightly season the fish with salt and freshly ground black pepper to taste. 5. Generously brush the fish all over with the olive oil.6. Put a griddle pan over a medium heat and when the pan is hot, add the fish to the griddle. Cook for 8-10 minutes (depending on the size of the fillets), turning once, until cooked through and golden-brown. Serve immediately with either Caper and dill dressing or Smoked chilli dressing.
