Cranberry Applesauce Two Ways
Yield: Makes 8 servings
Ingredients:
2pounds McIntosh apples, peeled, cored and chopped
2cups fresh or frozen cranberries
1cup light brown sugar
1tablespoon unsalted butter
2cups fresh or frozen cranberries
1cup brown sugar
1tablespoon unsalted butter
2-1/2cups prepared applesauce
Preparation:
1.Cook apples, cranberries, sugar and 1 cup water in 5-quart pot over medium-high heat for 40 minutes, stirring often, until cranberries have popped and apples are broken down or very soft and can be mashed against the side of the pot. Stir in butter until melted. Serve at room temperature or chilled.2.If you like smooth applesauce, use a blender or immersible mixer to purée mixture to a silky consistency before serving.3.Cook cranberries, sugar and 1/2 cup water in medium saucepan over medium-high heat for 25 minutes, stirring occasionally, until cranberries have popped and sauce has thickened. Stir in butter until melted. Stir in prepared applesauce. Serve at room temperature or chilled.
