Cook It Your Way
Cooking is a lot of fun and it is an art. Cooking, unlike baking, is not an exact thing. You can add, you can remove, you can substitute, you can experiment. When you are reading over a recipe, if there is something in it that you don\'t care for and something else sounds better, substitute it. You might turn a good recipe into a great recipe with a little more of this and a little less of that.
For example, the recipe of the week for Jambalaya called for 2 lbs. of shrimp, 1/2 lb. of chicken, and 1/2 lb. of smoked sausage. I changed it to a pound of each and it is great.
One thing to remember when you are adding spices, salt, and pepper: you can always add more, but it is very hard to cover up the seasonings once too much has been added.
