Callaloo bake

Ingredients
1 tbsp unsalted butter8 spring onion whites, sliced¼ Scotch bonnet chilli, finely chopped2 garlic cloves, crushed100g/4oz long grain rice200ml/1/3 pint chicken stock2 tbsp tomato purée100g/4oz canned callaloo, drainedsalt and freshly ground black pepper
Method
1. Preheat the oven to 220C/425F/Gas 7.2. In a medium saucepan, gently melt the butter.3. Sauté the onion, chilli and garlic for one minute, to soften.4. Add the rice and cook for 2-3 minutes, stirring occasionally.5. Pour in the stock and tomato purée and gently bring up to the boil.6. Reduce the heat to a simmer and stir in the callaloo. Season.7. Transfer the mixture to a gratin dish.8. Bake for 6-8 minutes or until the stock is absorbed and the rice cooked through.9. Serve.
