Cajun Shrimp with Rotini and Roasted Red Pepper Sauce
Cajun Grilled Shrimp with Rotini and Roasted Red Pepper Sauce
Yield: Makes 4 servings
Not only is shrimp low in calories, but it is also an excellent source of protein, zinc, iron and copper.
Ingredients:
10ounces uncooked rotini pasta
2jars (7 ounces each) roasted peppers packed in water, well drained
2cloves garlic
2tablespoons olive oil
1/2teaspoon salt
1/4cup chicken broth
1/8teaspoon ground red pepper
Nonstick cooking spray
12ounces medium shrimp, peeled and deveined
1-1/2teaspoons chili powder
1-1/2teaspoons lemon pepper
3/4teaspoon paprika
Preparation:
1.Cook pasta according to package directions, omitting salt. Drain; set aside.2.Meanwhile, place peppers, garlic, oil, salt, chicken broth and ground red pepper in food processor or blender; process until smooth. Set aside.3.Spray large nonstick skillet with cooking spray. Heat over medium heat until hot. Add shrimp, chili powder, lemon pepper and paprika; cook and stir 8 minutes or until shrimp are opaque. Add roasted pepper mixture; heat thoroughly. Do not boil. Serve over pasta. Garnish with chopped parsley, if desired.
