Baked Barbecue Chicken
Baked Barbecue Chicken
Yield: Makes 6 servings
Ingredients:
1broiler-fryer chicken (about 3 pounds), cut into pieces
1small onion, cut into slices
1-1/2cups ketchup
1/2cup packed light brown sugar
1/4cup Worcestershire sauce
2tablespoons lemon juice
1tablespoon liquid smoke
Preparation:
1.Preheat oven to 375°F. Spray 13X9-inch baking dish with nonstick cooking spray. Place chicken in prepared dish; top with onion slices.2.Combine ketchup, brown sugar, Worcestershire sauce, lemon juice and liquid smoke in small saucepan. Heat over medium heat 2 to 3 minutes or until sugar dissolves. Pour over chicken.3.Bake chicken 1 hour or until juices run clear. Discard onion slices. Let stand 10 minutes before serving.
Serving Suggestion:
Serve with baked potatoes, crusty French bread and tossed green salad.
