Asparagus and Chicken Stir-Fry
Yield: Makes 4 servings
Ingredients:
2teaspoons olive oil
1cup onion slices
1clove garlic, minced
1/2pound boneless skinless chicken breast, cut into 2-inch pieces
1-1/2pounds asparagus,* trimmed and diagonally sliced into 2-inch pieces
2cups red bell pepper cubes
1tablespoon chopped fresh basil or 1 teaspoon dried basil
1/2teaspoon salt
1/8teaspoon black pepper
Preparation:
1.Heat oil in large nonstick skillet or wok. Add onion and garlic; stir-fry over medium-high heat 1 minute or until onion is softened. Add chicken breast; stir-fry 3 minutes or until chicken is no longer pink.2.Add asparagus, bell pepper, basil, salt and black pepper; stir-fry 3 to 4 minutes or until asparagus is crisp-tender.
Note:
This dish can be served with hot rice or pasta.
