Apple Pancake Sandwich
Yield: Makes 2 servings
Ingredients:
2small Granny Smith apples
1/3cup liquid egg whites
2tablespoons bacon bits
1/4teaspoon ground cinnamon
1/2teaspoon sugar substitute
4frozen pancakes
4teaspoons sugar-free maple syrup
Preparation:
1.Peel, core and chop apples (yields about 1 cup). Mix apples, egg whites, bacon bits, cinnamon and sugar substitute in small bowl.2.Place 2 frozen pancakes in small microwave-safe dish and top each evenly with apple mixture. Microwave on HIGH 3 minutes.3.Drizzle each with 2 teaspoons of maple syrup, top with remaining pancakes and microwave on HIGH 2 more minutes.4.Serve warm or let cool to pick up like a sandwich.
Note:
To reduce sodium and increase fiber, make your own pancakes from a multigrain pancake mix ahead of time and freeze them between layers of plastic wrap. You may also make this recipe with frozen multigrain waffles.
