Apple Orchard Pancakes
Yield: Makes about 20 pancakes
Ingredients:
2-1/2cups all-purpose flour
3/4cup packed brown sugar
2teaspoons baking powder
1-1/4teaspoons ground cinnamon
1/2teaspoon baking soda
1/4teaspoon salt
2eggs
1-1/2cups milk
1/4cup vegetable oil
1teaspoon butter
3/4cup chopped dried apples
1/2cup golden raisins
Preparation:
1.Combine flour, brown sugar, baking powder, cinnamon, baking soda and salt in large bowl. 2.Beat eggs in medium bowl; stir in milk and oil. Add egg mixture to flour mixture; stir until almost blended. Stir in apples and raisins.3.Lightly coated griddle with butter. Heat griddle over medium heat until hot. Pour about 1/4 cup batter onto griddle for each pancake. Cook until bubbles form in batter and bottom of pancakes are lightly browned; turn and cook 2 minutes or until brown and cooked through. Repeat with remaining batter. Serve pancakes with syrup, if desired.
