American pancakes with crisp bacon and maple syrup

Ingredients
175g/6oz self raising flour110g/4oz caster sugar1 tbsp baking powder2 eggs275ml/9fl oz milkbutter, for fryingTo serve: 8 slices streaky bacon, cooked until crisp55ml/2fl oz maple syrup
Method
1. To make the pancakes, sift the flour into a bowl with the baking powder and caster sugar. Add the eggs and milk, whisk together but be careful not to over mix it.2. Heat a little butter in a non-stick pan and then add 2 tbsp of batter for each pancake. Swirl the mixture in the pan, until it is evenly spread. 3. Serve topped with the crisp bacon and maple syrup.
